Easy Italian Bruschetta Appetizer

It’s menu day for my monthly dinner club, and it’s everything Italian this month. I want to share this easy Italian bruschetta appetizer with you.

I’ve been making this for years, and it’s always a crowd favorite!

In case you are new here, let me explain about the monthly dinner club.

Four of my blogger friends and me, started a virtual monthly dinner club last January. Every month we choose a theme and we all create a tablescape around that theme. We share our tablescapes the last Thursday of the month.

We also create a menu around the theme, and each of creates a recipe to share on the last Saturday of the month.

It has been so fun and I look forward to it every month.

This month I was responsible for the appetizer and I immediately thought of this easy italian bruschetta type appetizer.

As I already mentioned, I’ve been making it for years for gatherings at my own how or to take to parties and get togethers.

Everyone always loves it, and it is so simple to make.

ingredients for italian bruschetta appetizer

1 pkg. cherry tomatoes, chopped
(I use the small sweet cherry tomatoes unless it’s tomato season and I have them in my garden or can buy at the farmers market)

1 large cucumber, chopped

5-6 green onion stems, chopped

Italian seasoning

feta cheese, crumbled

olive oil

Chop your tomatoes, cucumbers, and green onion stems. Mix together in a bowl with about 3 teaspoons italian seasoning.

Let sit for a few minutes to marinate flavors.

Drizzle olive oil on a plate or platter, then pour vegetable mixture over.

Sprinkle feta cheese over the top.



Serve with warm baguette slices. I purchase a skinny baguette and slice about 1/2″ thick. Place slices on a baking sheet, drizzle with olive oil and toast for about 5 minutes on 400 degrees, or until lightly browned.

You can also serve with crackers if you are taking it to a party and the warm baguette isn’t practical.

Easy Italian Bruschetta Appetizer

Such a delicious and easy appetizer that is great for any occasion!

Ingredients

  • 1 pkg. cherry tomatoes
  • 1 large cucumber
  • 5-6 green onion stems
  • 1 tablespoon italian seasoning
  • 3-4 tablespoons feta cheese
  • 2 tablespoons olive oil

Instructions

  • Chop tomatoes, cucumbers, and green onion stems.
  • Mix together in a mixing bowl and add italian seasoning.
  • Drizzle olive oil over plate/platter.
  • Pour vegetable mixure over olive oil.
  • Sprinkle with crumbled feta cheese.
  • Serve with warm baguette slices or crackers.

Notes

I use sweet cherry tomatoes unless it is tomato season and I have fresh tomatoes in my garden.  
I purchase skinny baguette bread, slice about 1/2″ thick and toast on 400 degrees for about 5 minutes or until slightly browned.  Serve the dip with the warm bread.
If you are taking the dip for an event, you can serve with crackers if toasting bread isn’t practical.
