The Best Sundried Tomato, Spinach and Chicken Pasta

Hey friends, it’s recipe day for my dinner club group! We have a wonderful menu to go along with our Fall Garden Party. I made the best sundried tomato, spinach and chicken pasta and can’t wait to share the recipe with you.

4 Chicken breasts cut into bite size pieces – (I typically use a package of chicken tenderloins because they are usually less expensive and it makes cutting into bite size pieces much easier)

salt/pepper

olive oil

8 oz. fresh mushrooms – I used baby bella, but you can use whatever you like

1 lb. box fettucine

3 cups fresh spinach

3/4 cup Sundried tomatoes cut into small pieces

1 1/2 cups heavy cream

1/2 cup parmesan

Cut up chicken breasts/tenders into bite size pieces.
Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Saute’ chicken in 2 tablespoons olive oil for 4-5 minutes, stirring occasionally.
Meanwhile, add 1 lb. box fettucine to salted boiling water and cook until done.
Rough chop 8 ounces mushrooms.
Tear 3 cups fresh spinach into small pieces.
Add mushrooms and spinach to chicken mixture and cook another 3-4 minutes.
Add sundried tomatoes and cook 1 more minute.
Add 1 1/2 cups heavy cream to mixture and cook 3-4 minutes until mixture slightly thickens.
Add 1/4 cup parmesan cheese and cook just until melted then turn heat off.
Drain fettucine and mix chicken mixure with fettucine in large serving bowl.

A super easy and delicious pasta dish that is perfect for a weeknight meal or special occasion dinner.

  • 1 lb. fettucine
  • 4 chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Add 1/4 cup parmesan and cook just until melted and turn heat off.
  • Drain fettucine.
  • Mix fettucine and chicken mixture in large serving bowl.

And that’s it! Super easy and delicious sundried tomato, spinach and chicken pasta.
