For the first time ever, my peach tree was loaded this year!
I was so excited to have so many peaches, but unfortunately most of them are ripe about the same time, so I had to figure out how to use them all.
Of course, we gave some away to friends, but I still had plenty.
what can you do with so many fresh peaches?
I made a peach cake, peach bread, a peach sauce, peach salsa, grilled peach salad, peach pie and even an amazing and refreshing chilled peach soup.
I also created a beautiful tablescape, and even made a frozen ice bucket with peaches.
And if you’re wondering what to do with over ripe peaches, some of these desserts are perfect for that!
fresh peach recipes –
peach bread
This is one of my favorite recipes for quick bread.
It’s great for a dessert or for a breakfast bread, and isn’t overly sweet.
You can make it in mini loaf pans for a great little gift for friends and neighbors, or in a large loaf pan for your family or a large crowd.

It’s incredibly moist and one of the easiest desserts to make!
You won’t believe what one of the ingredients is.

peach salsa
I have a recipe for Strawberry Salsa that I got many years ago.
With my abundance of peaches, I decided to substitute the strawberries with fresh juicy peaches.
It turned out SO good, and is such an easy recipe. I’m so glad I tried it.
Using fresh ingredients will guarantee a delicious peach salsa.
Peach Salsa
Ingredients
- 1 cup chopped fresh peaches
- 1/2 cup chopped tomatoes
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped green onion stems
- 2 tablespoons chopped bell pepper
- 2 tablespoons catalina dressing
- squeeze of lime
Instructions
- Chop peaches, tomato, green onion stems, bell pepper and cilantro.
- Squeeze lime over peaches to keep from turning brown.
- Add all to a serving bowl.
- Mix together with 2 tablespoons Catalina dressing.
- Serve with tortilla chips.
grilled peach salad
This is definitely a summer favorite at my house.
Cut your peaches in half and take out the pit. I like to quarter them after the pit is removed.
Place on the grill cut side down, and grill for 2-3 minutes on each side.
Use any greens you like for your salad. I typically used mixed greens or spinach.
Add your grilled peaches, goat cheese crumbles, sugar pecans and top with a drizzle of balsamic vinaigrette.

I cannot begin to tell you how delightful this peach soup is!!
I experimented with a chilled blueberry soup recipe I have and came up with another version and it does not disappoint!
It is a delicious addition to a brunch menu or just a light and creamy snack all by itself.
blackened pork chops with fresh peach cucumber salsa
My friend Lynn, at Living Large in a Small House, made this amazing blackened pork chops with fresh peach cucumber salsa that you might like.
I don’t know about you, but peach cucumber salsa sounds like something I could eat on a lot of things in addition to the pork chops.

Also my friend Rachel, at The Ponds Farmhouse, made this amazing peach bruschetta.
Doesn’t this look so yummy and refreshing?
A few other great ideas for fresh peaches is peach ice cream, peach crumble or peach dump cake.
Have you ever made a dump cake?
It is the easiest recipe you will ever make, and it is so yummy.
Add about 2 cups chopped fresh peaches to the bottom of a 9×13 baking dish.
Sprinkle a boxed yellow cake mix over the top of the peaches and spread out evenly.
Cut 1 1/2 sticks butter into small pieces and place randomly over the top of the dry cake mix.
Bake about 40 minutes in a 350 degree oven.
Serve warm or room temperature with vanilla ice cream, whipped cream or crème fraîche.
homemade peach jam, or not???
Recently, I saw She Follows Flowers post about making bourbon peach jam. It looked beautiful and sounded amazing, so I thought I would try it.
I messaged her for the peach jam recipe and she was so kind to share it, but warned me that it can be hard to set sometimes.
I was determined to try it, and unfortunately mine didn’t set.
However, it turned into an amazing peach sauce!!
We have used this sauce as a spread for toast, over a scoop of vanilla ice cream, over brie and cream cheese, over pork tenderloin, and in a cocktail.
The possibilities are endless!
If yours happens to set, you will have Bourbon Peach Jam, and if not you will have an incredible Bourbon Peach Sauce.
And either way, it makes a great gift for friends or neighbors. Â
Put the jam/sauce in cute mason jars and add a tag for a great hostess gift!
peach bourbon jam/sauce
1 quart finely chopped, pitted and peeled peaches
7 1/2 cups sugar
1/4 cup fresh lemon juice
1 pouch liquid pectin
1/4 cup bourbon
Combine fruit, sugar, and lemon juice in a large sauce pan. Slowly bring to a boil then add bourbon.
Gently boil and stir until sugar dissolves.
Stir in liquid pectin. Return to a boil. Boil 1 minute, stirring constantly.
Remove from heat. Skim foam in necessary.
Ladle hot jam into hot jars, leaving 1/4 inch headspace.
Place lids and finger tighten. Process 10 minutes in boiling water canner.
Turn heat off and let sit for 1 minute. Remove jars without tipping and place on wire racks allowing to sit overnight.
peach cocktail
I created a cocktail a few weeks ago made with fresh pineapple and basil simple syrup.
It was so delicious and refreshing!
I tried it out with fresh peaches instead of pineapple.
And you know what???? It was just as good!!
Use can use the pineapple basil cocktail recipe and just substitute fresh peach for the pineapple.
peach tablescape inspiration
A couple of years ago, for my monthly dinner club, I created this peach inspired tablescape.
It’s such a fun theme for summer, and made such a bright and fresh table.

Fresh peaches and peach leaves from the tree in my yard made such a beautiful centerpiece.

frozen ice bucket with peaches
And my favorite thing I did with the peaches, was this frozen ice bucket.
I used to make these occasionally probably 20 years ago. I had forgotten about them until a few months ago, and I created one for a New Year’s Eve party.

For this one, I used fresh peaches cut in half, peach pits, and a few peach leaves.
They are so beautiful and such a fun addition to a party or gathering.
easy method for peeling peaches
To make your life SO much easier, drop the peaches into boiling water for about 20 seconds.
Don’t leave any longer, because you don’t want to cook the peaches.
Remove from the boiling water and the skins will slip right off.

Yes, and it sounds like a lot, so I decreased it to 5 cups, but I think that may be part of the reason it didn’t set up. I read, after I did that, that you shouldn’t decrease the amount of sugar, for that very reason.
