Hey friends, it’s menu day for my monthly dinner club. We’re hosting a brunch and we have some amazing and easy recipes for a book club brunch get together.

I don’t know about you, but I love hosting a girl’s get together and especially for brunch and I had so much fun creating a book theme tablescape, as well.

brunch egg casserole Southwestern style

I was responsible for the main dish this month and I chose a hearty brunch egg casserole.

I got this recipe from a friend many years ago, and I’ve been making it ever since.

It makes a lot so it’s great to serve to a large group.

It’s also great for overnight guests because you make it the day before and then just pop it in the oven the next morning.

Serve it with fruit and a side of salsa and that’s all you need. Or you can see more options for things to serve with a breakfast casserole here.

It can also be frozen, so it’s a good option to make for friends or family that are ill, just brought home a new baby, etc. because they can freeze it until needed.
