An Easy and Refreshing Sparkling Grapefruit Cocktail

Hey friends, I had so much fun creating this beautiful drink. So, I want to share an easy and refreshing sparkling grapefruit cocktail that is perfect for your spring and summer gatherings.

I made several variations including 2 cocktails and a mocktail.

You won’t believe how easy it is, but it’s so pretty.

And you only need a few simple ingredients to create a delicious drink.

My inspiration to create this drink were some beautiful grapefruit I picked up at the grocery store last week.

Would you believe I don’t really like grapefruit??

I mean, I don’t like to eat a grapefruit, but I love a good grapefruit flavor cocktail.

Weird, I know! I also don’t like peanut butter, but I love a peanut butter cookie.

Anyway, back to this yummy cocktail.

This addition is what makes these drinks so fun, festive and pretty.

First, I purchased flower shape silicone molds.

I juiced several grapefruit and poured the juice into the molds.

You could use canned ruby red grapefruit juice but fresh pink grapefruit juice is much better.

Then I put the molds in the freezer and left overnight.

It took about 4 grapefruit to make enough juice to fill the 6 flower shapes.

Obviously, you could use any shape mold that works well with your theme.

I am making these cocktails for Mother’s Day, so I thought the flower was perfect.

My first and favorite variation is prosecco (or champagne) and one of the grapefruit juice ice cubes.

It’s almost like a grapefruit mimosa recipe.

I added a grapefruit juice flower cube to a cocktail glass, then poured prosecco over the ice.



I used a margarita glass because my flower ice molds were fairly large, but you could use a champagne flute if your ice cubes are smaller.

Let the drink sit for about 10 minutes and the grapefruit ice will begin to melt into the prosecco.

The flavor of the fresh grapefruit juice mixed with the prosecco is delightful and refreshing.

Garnish with a grapefruit wedge.

This is a perfect brunch drink and is a fun twist on a traditional mimosa.

The next variation I tried is vodka, topo chico sparkling water (or club soda) and the grapefruit juice ice cube.

Add 1-2 ounces vodka to a cocktail glass.

Next, add your grapefruit flower cube.

Top with topo chico or club soda.

If you want to take this cocktail up a notch, add a teaspoon of rosemary simple syrup.

Garnish with grapefruit slices, and a sprig of rosemary.

This grapefruit vodka cocktail is light and refreshing and perfect for a summer afternoon or happy hour.

Rosemary Simple Syrup

To make rosemary simple syrup…

Add 1 cup sugar and 1 cup water to a small saucepan.

Bring to a boil and stir until sugar dissolves.

Add 4-5 sprigs rosemary.

Remove from heat and let steep for about 30 minutes or until mixture has cooled.

Pour the mixture through a strainer and discard rosemary sprigs.

Store the syrup in an airtight container in the refrigerator for up to a month.

Add a grapefruit juice flower cube to a cocktail glass.

Pour sparkling water (I use Topo Chico) over ice cube.

Let sit for about 10 minutes.

The grapefruit juice ice cube will begin to melt and blend with the sparkling water.

If you prefer a bit of a sweet drink and the bitter grapefruit isn’t for you, add a couple of teaspoons of simple syrup.  See recipe above for rosemary simple syrup, or you can omit the rosemary for a plain simple syrup.

Garnish with a slice of grapefruit.

other grapefruit cocktail variations

Another thing I like to add to a grapefruit cocktail is Fever-Tree sparkling pink grapefruit drink.

This would be delicious in any of the above drink combinations.

It is non alcoholic, so it can also be used in the mocktail drink. Just use the sparkling pink grapefruit seltzer and pour over the grapefruit ice cube, instead of the plain sparkling water.

And for the vodka cocktail, you can replace the sparkling grapefruit drink with the Topo Chico or add half and half.

For your next party you could fill a bar cart or drink station with all the ingredients for a self serve grapefruit cocktail/mocktail.
