Pork Tenderloin with Caramelized Apple Slices and Rosemary
Can you believe the holidays are right around the corner? Today I am sharing an amazing and easy recipe for pork tenderloin with caramelized apple slices and rosemary that is perfect for all of your holiday entertaining.
Of course, this is a great recipe for anytime of the year, but it is a perfect main dish for Thanksgiving or Christmas dinner.

A friend recently shared this recipe with me and it sounded so delicious that I tried it right away.
My husband and I both loved it and it will definitely be on the menu often.
I served it with garlic mashed potatoes, fresh green beans and my favorite salad which made perfect sides for this yummy pork tenderloin.

Holiday Tablescape Ideas

ingredients for pork tenderloin with apples and rosemary
2 (1 pound) pork tenderloins
1 1/2 teaspoons salt
1 1/4 teaspoons black pepper
1 package of bacon
3 apples, cut into wedges (I used Gala apples, but you can use any type of apple you like)
1 small red onion, thinly sliced
1 teaspoon fresh rosemary, finely chopped
1 tablespoon apple cider vinegar
1 tablespoon maple syrup

Place oven rack in middle position and preheat oven to 425 degrees.
Pat pork dry with paper towels and sprinkle pork with 3/4 teaspoon salt and 3/4 teaspoon pepper.
Wrap bacon slices around tenderloins. Start on underneath side and wrap around the pork. Continue wrapping bacon slices until it is mostly covered and bacon seams end up on the underneath side.
Place pork in a large skillet (non-stick), bacon seams down, and cook over medium-high heat until bacon is golden brown. Flip the pork, as needed, to cook bacon all the way around. This should take about 4 minutes on each side.
Transfer the pork to a rimmed baking sheet pan and roast at 425 degrees until the pork internal temperature registers 140 degrees with a meat thermometer inserted at the center of the meat. This will take about 15-20 minutes.
Remove from oven and cover with aluminum foil until ready to slice and serve.
Place apple slices in a single layer in excess fat left in skillet that pork was seared in and cook over medium heat until they are caramelized. Flip apple slices to cook on both sides. This will take about 2 minutes per side.
I used Gala apples but any sweet apples will work just fine. If you’re not sure about the sweetness of different types of apples, I found this super helpful chart.
Stir in onion slices, rosemary and remaining 3/4 teaspoons of salt and 1/2 teaspoon of pepper and cook about 4 minutes or until onion is tender.
Stir in apple cider vinegar and maple syrup and cook until the liquid is cooked out. About 1 minute.
Slice tenderloin into 3/4 inch-thick medallions and serve with rosemary and apple mixture on top.
The sweetness of the apple along with fresh herbs is an amazing flavor combination!

other notes about this recipe
I think this caramelized apple and rosemary mixture would be delicious on all different cuts of pork, like pork chops or a pork roast.
You can save any leftovers of the pork tenderloin and apple mixture by storing in an airtight container in the refrigerator.
I used Gala apples but you can use any sweet flavor apple.

Do you sear pork tenderloin before baking?
For juicy pork tenderloin, sear the pork on all sides before baking. This helps seal the juices in before you bake it.
How do you know when pork tenderloin is done without a themometer?
If you poke a hole in the pork with a knife or fork and the juices run clear or just slightly pink, the meat is done. If the juice is very pink or red, it needs more cooking time.
