Easy White Bean Chicken Chili Crockpot Recipe

ingredients for white bean chicken chili
1 pound boneless chicken breasts
1 medium onion, chopped
2 cans great northern white beans (drained)
1 can white whole kernel corn (drained)
small can green chilis (I use mild green chiles)
1 teaspoon salt
1/2 teaspoon chili powder
1 teaspoon black pepper
1 teaspoon ground cumin
8 ounces chicken broth
1 – 12 ounce beer
1 – 8 ounce block cream cheese
1/4 cup half & half
directions for white bean chicken chili
Place chicken breasts in bottom of crock pot.
Mix salt, pepper, chili powder and ground cumin together in a small bowl, then sprinkle over chicken breasts.
Add chopped onion, drained canned beans, drained white corn, and green chilies to crockpot.
Next, add chicken stock and beer to the crockpot.
Cover and cook on medium for 5-6 hours or until chicken is done and tender.
Remove cooked chicken from crockpot and shred using 2 forks.
Add shredded chicken back to crock pot.
Finally, add 8 ounce cream cheese and half & half or heavy cream.
Let cook another 20-30 minutes or until cheese has completely melted.

A few of my favorite ways to enjoy this white chicken chili is with tortilla chips, or white rice.
Also, cornbread muffins are a great option. I like to serve mine with mini cornbread muffins.
Some great toppings are sour cream, chopped green onion stems, Monterrey Jack cheese, diced avocados, chopped fresh cilantro, jalapeno pepper slices or lime wedges.

How long with white chili last in the refrigerator?
You can store the chili in an airtight container for up to 5 days. Of course, it won’t last that long though!
Can you freeze white chicken chili?
Yes, you can freeze white chili. After the chili cools, place it in a freezer-safe container or heavy duty freezer safe bags. You can store for up to 3 months in the freezer.
tips and variations for white chicken chili
Using beer as part of the liquid adds a richer flavor to your chili, but you can certainly use only chicken broth, if you prefer.
If you are using beer, you can use any kind you like. I am not really a beer drinker, so I just use whatever my husband may have in the fridge. Typically, I use a Corona or a Shiner Bock.
If you prefer a spicy soup, use hot green chilies and add a dash of cayenne pepper to your seasoning mixture. You can also use pepper jack cheese as a topping.
Cannellini beans can be substituted for white northern beans.
You can use regular whole kernel corn instead of white corn.
If you prefer a less chunky soup, you can remove some of the beans and corn and use an immersion blender to blend some of the vegetables, then add liquid back to the crockpot.
If you need a quick meal and don’t have time to use the slow cooker all day, you can purchase a rotisserie chicken from the grocery store and cook the chili in a large pot on the stove. Just remove chicken from the bones, chop the chicken then add all other ingredients like recipe above.

This flavorful white chicken chili is the perfect one pot meal! The creamy white beans, green chilis, cream cheese and beer broth make a great alternative to traditional chili.
This is such a great recipe to take to a friend or neighbor. I like to use mason jars, fill with soup, tie a ribbon and add a tag.
Add some mini cornbread muffins, and a couple of toppings. It’s a great way to make a meal to take to someone in need.
