Easy Green Chili Cheese Fudge Appetizer

I have to tell you, this easy green chili cheese fudge appetizer is addictive!! It’s recipe day for my dinner club and I was responsible for the appetizer this month for our wine and cheese party.

I knew right away that this recipe was perfect for the occasion.

It is such an easy recipe that’s the perfect appetizer of cheesy goodness for any get together.

I’ve been making this recipe for many years. The original recipe was for jalapeno cheese fudge, so the first time I made it I went strictly by the recipe. But I don’t really like spicy food, so the next time, I altered the recipe to include green chilies instead.

I have also seen similar recipes referred to as “mexican fudge”.

So, if you prefer a hotter flavor, you could certainly add jalapenos.

Also, the recipe called for particular kinds of cheeses, but I use whatever I have on hand.

And if I don’t have enough and I need to buy more cheese, I typically use a mixture of mild cheddar and colby jack.

You could certainly use a mexican blend cheese, or a mixture of cheddar, if you prefer. Experimenting is part of the fun of a new recipe, right??

It is delicious by itself or you can serve with tortilla chips.

6 cups shredded mild cheddar cheese
2 cups shredded colby jack cheese
2 – 4.5 ounce cans chopped green chilies
6 eggs
3/4 cup milk

directions for green chili cheese fudge

Spread the 2 cans of diced green chiles across the bottom of 9×13 baking dish.

In a large bowl, combine slightly beaten eggs, cheeses, and milk.

Mix together until well blended and pour cheese mixture over green chilies and spread out evenly.

Bake for 40 minutes at 375 degrees until golden brown and bubbly.

Cover lightly with a piece of aluminum foil during the last 15- 20 minutes to avoid the top getting too brown.

Cool for at least 20 minutes before cutting into small squares.

This easy green chile cheese appetizer is perfect for any get together and will be a crowd favorite.

Ingredients

  • 6 cups shredded mild cheddar cheese
  • 2 cups shredded colby jack cheese

Instructions

  5. This recipe looks great and I plan to make the “fudge”. There are no eggs listed under “Ingredients”, but they are referenced in the “Instructions”. Curious as to how many eggs should be used. Thanks!

    1. So sorry for the oversight. I listed the amount of eggs in the body of the post, but failed to add it to the recipe card.

      The recipe is 6 eggs. Thanks for pointing that out, and I have corrected it on the recipe card in case you want to print it out.

    My mom used to make a similar recipe back in the 1980’s. She would cut them in small squares and serve them on Triscuit crackers.

    1. Oh, that’s a great idea. I like to serve them cut into small squares but haven’t ever served them with crackers.
