In honor of the spring season finally coming, my dinner club is hosting a spring fling party. We have 6 great recipes for a fresh spring salad bar menu to serve at our get together.

These are all easy recipes that are light and delicious.

If you are new here, let me explain about my dinner club.

About 2 years ago, I joined 4 other blogger friends and created a virtual monthly dinner club.

Every month, we have a theme, and we each create a tablescape to go along with our theme. The tablescapes are shared with you, the last Thursday of every month.

We also create a menu to go along with our theme that we share the last Saturday of the month. We take turns with each of the courses.

Typically, we have a drink, appetizer, 2 side dishes, a main dish and a dessert. But, since we are having a salad bar this month, we have a drink, dessert and 4 fresh spring salad recipes.

Last year, we decided to invite a guest host every month, and this month we are happy to have Jennifer from Cottage On Bunker Hill joining us.

I had so much fun creating the table for our salad bar menu and spring party.

A lemon theme seemed perfect for a spring party, and I added touches of blue and white, and also a few gardening elements to my table.

My buttermilk pie recipe has been a family favorite pie for years and recently I decided to change it up a bit by adding lemon curd.

And wow, it just made a great recipe even better.

This old-fashioned recipe is a simple pie to make and one of those classic southern desserts.

If you like lemon flavor, this might be the best pie you’ve ever had!

I love to make homemade lemon curd to use in my recipes.

It is so good in so many different things.

You can certainly use store bought lemon curd for this lemon buttermilk pie, but if you have the chance to make your own lemon curd, it’s even better..

The fresh lemon juice and lemon zest just takes it up a notch.

Lemon curd is also a great gift for friends, family or neighbors.

Put it in a cute jar with a tag and it can also be a great favor for a summer party or a lemon theme party.
