Microwave Coconut Cream Pie

This recipe is so easy and delicious! There are several variations and it can be made into chocolate pie, strawberry pie, banana cream pie or even banana pudding.

Equipment

  • 1 microwave
  • 1 wire whisk
  • 1 microwave safe bowl

Ingredients

  • 1 cup sugar
  • 1/3 cup all purpose flour
  • 2 cups whole milk
  • 3 egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla
  • 3/4 cup coconut flakes
  • 1 baked pie shell
  • whipping cream or cool whip optional
  • additional coconut flakes for toasting optional

Instructions

  • Mix sugar and flour together in microwave safe bowl.
  • Then add milk and mix with wire whisk until well blended.
  • Add egg yolks to mixture and beat well.
  • Microwave for 5 minutes.
  • Stir and microwave 3-5 minutes more. This will depend on the power of your microwave. You want a consistency of pudding.
  • Remove bowl from microwave and add butter and vanilla.
  • Add coconut and stir until well blended.
  • Pour into baked pie shell
  • Top with meringue or whipped topping.
  • Add toasted coconut to top of pie.

Notes

If you want to make a chocolate pie, add 1/4 cup chocolate in place of coconut flakes.
If you want a strawberry pie, omit coconut and add fresh sliced strawberries on top of pie filling then top with whipped cream.
If you want a banana pie, omit coconut and add sliced bananas on top of pie filling and top with meringue or whipped cream topping.
