Easy Southern Peach Bread

- 1 cup fresh peaches, peeled and chopped
- 1/2 cup oil
- 1/2 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Preheat oven to 350 degrees.
Grease 4 mini loaf pans or 1 large loaf pan.
In a mixing bowl, combine peaches, oil, sugar, eggs, sour cream and vanilla.
Add flour, baking soda, and salt just until combined.
Pour into greased loaf pans, and bake mini loaves for 25-30 minutes or large loaf for 50-55 minutes.
