Easy Peach Pound Cake with Lemon Glaze

This recipe is super easy and so moist and delicious! You won't believe what the ingredient is that adds the fruit flavor!

Ingredients

  • 1 box yellow cake mix
  • 1 small box instant vanilla pudding
  • 2 jars peach baby food
  • 3 eggs
  • 1 cup vegetable oil
  • 1 teaspoon ground cinnamon
  • 1 cup powdered sugar
  • juice from 1-2 lemons
  • chopped fresh peaches (optional)

Instructions

  • Mix all ingredients together until well blended.
  • I add chopped fresh peaches to the batter when they are in season. But this is totally optional.
  • Grease and sugar (or flour) bundt pan.
  • Pour cake mix into bundt pan.
  • Bake at 325 degrees for 50-60 minutes or until lightly browned and cake tester comes out clean.
  • Remove cake from pan and let cool.

Lemon Glaze

  • Mix 1 cup powdered sugar
  • with juice from1-2 lemons and whisk together until all sugar is dissolved.
  • Drizzle over cake.

Notes

If you want a thicker glaze then only use juice from 1 lemon.  For thinner glaze use 2 lemons.
