Easy One Pot Cajun Jambalaya

This easy one pot cajun jambalay is the perfect meal for busy weeknights and also great for serving a large crowd.

Ingredients

  • 1 rotisserie chicken or cooked chicken breasts cut into bite size pieces
  • 1 can cream of celery soup
  • 1 can french onion soup
  • 1 can Rotel tomatoes
  • 2 cups white rice
  • 3 cups chicken broth or water I use 1/2 and 1/2
  • 2 teaspoons cajun or creole seasoning can add more to taste
  • 1/2 package Eckridge sausage (1 full sausage piece cut into bite size pieces) optional
  • 1 cup shrimp optional

Instructions

  • Add all ingredients to a large pot and cook on medium heat until rice and shrimp (if you are using shrimp) is fully cooked.
  • Simmer for at least an hour so all the flavors mix together well.
  • You will want to add more liquid as it simmers, because as the rice cooks, it will thicken. You can add more chicken stock or water.
  • Be sure and stir often so it doesn't stick to the bottom of your pot.

Notes

Feel free to use a combination of chicken, sausage and shrimp.  
I like to use a little of all three, but this is completely up to you.
You can make this recipe as thick or thin as you like depending on the amount of liquid you add as it simmers.
