Ingredients
5ouncesfresh spinach, chopped
8ouncescream cheese, softened
8 ounces sour cream
1canartichoke hearts, chopped
2cupsmozzarella cheese, grated
1 1/4cupparmesan cheese, grated
3clovesgarlic
salt and pepper, to taste
tortilla chips for dipping
Instructions
Chop spinach and place in a large mixing bowl.
In another bowl, mix softened cream cheese, sour cream, chopped artichoke hearts, 1 1/2 cups of mozzarella cheese, grated parmesan cheese, minced garlic, salt and pepper.
Stir together then pour into the bowl with chopped spinach.
Mix all together until well incorporated then pour into a greased cast iron skillet.
Top with remaining 1/2 cup grated mozzarella cheese and place on preheated grill.
Cook over medium heat for about 20 minutes or until lightly browned and hot and bubbly.
Serve with tortilla chips for dipping.
Notes
You can also bake this spinach artichoke dip in the oven. Place in cast iron skillet or a baking dish and bake in a preheated 350 degree oven for about 25 minutes or until lightly browned, and hot and bubbly.
