Easy Grilled Spinach and Artichoke Dip

Ingredients

  • 5 ounces fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1 can artichoke hearts, chopped
  • 2 cups mozzarella cheese, grated
  • 1 1/4 cup parmesan cheese, grated
  • 3 cloves garlic
  • salt and pepper, to taste
  • tortilla chips for dipping

Instructions

  • Chop spinach and place in a large mixing bowl.
  • In another bowl, mix softened cream cheese, sour cream, chopped artichoke hearts, 1 1/2 cups of mozzarella cheese, grated parmesan cheese, minced garlic, salt and pepper.
  • Stir together then pour into the bowl with chopped spinach.
  • Mix all together until well incorporated then pour into a greased cast iron skillet.
  • Top with remaining 1/2 cup grated mozzarella cheese and place on preheated grill.
  • Cook over medium heat for about 20 minutes or until lightly browned and hot and bubbly.
  • Serve with tortilla chips for dipping.

Notes

You can also bake this spinach artichoke dip in the oven.  
Place in cast iron skillet or a baking dish and bake in a preheated 350 degree oven for about 25 minutes or until lightly browned, and hot and bubbly.
