The most delicious and easy cranberry orange cake you'll ever make. It can be made in a loaf pan and served as a sweet bread or in a bundt pan as a cake. Makes a beautiful presentation when decorated.

Ingredients
112 ounce package fresh cranberries
1cuporange juice
3cupssugar
1/2cupoil
1teaspoon salt
3teaspoonsbaking powder
1teaspoonbaking soda
3eggs
4cupsflour
2-3cups chopped pecansoptional
Instructions
Preheat oven to 350 degrees.
Mix cranberries with flour first. This keeps the cranberries from sinking to the bottom of the pan.
Add all other ingredients to the cranberry/flour mixture.
Mix together well.
Grease and flour bundt pan. (I actually like to use sugar instead of flour)
Pour batter into pan and bake at 350 degrees for 1 hour. Make sure cake is done in the center.
Notes
A couple of other options, are baking in a loaf pan and serving like a bread. Also, baking in mini loaf pans makes great gifts for friends and neighbors. You can also bake it in a 9x13 glass baking dish and cut into squares to serve. This cake/bread freezes really well, so you can make it ahead.The recipe calls for 3 cups of sugar which makes if fairly sweet. I suggest cutting the sugar if you want a less sweet bread or cake.
