Cranberry Orange Cake/Bread

The most delicious and easy cranberry orange cake you'll ever make. It can be made in a loaf pan and served as a sweet bread or in a bundt pan as a cake. Makes a beautiful presentation when decorated.

Ingredients

  • 1 12 ounce package fresh cranberries
  • 1 cup orange juice
  • 3 cups sugar
  • 1/2 cup oil
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 eggs
  • 4 cups flour
  • 2-3 cups chopped pecans optional

Instructions

  • Preheat oven to 350 degrees.
  • Mix cranberries with flour first. This keeps the cranberries from sinking to the bottom of the pan.
  • Add all other ingredients to the cranberry/flour mixture.
  • Mix together well.
  • Grease and flour bundt pan. (I actually like to use sugar instead of flour)
  • Pour batter into pan and bake at 350 degrees for 1 hour. Make sure cake is done in the center.

Notes

A couple of other options, are baking in a loaf pan and serving like a bread.  Also, baking in mini loaf pans makes great gifts for friends and neighbors.  
You can also bake it in a 9x13 glass baking dish and cut into squares to serve. 
This cake/bread freezes really well, so you can make it ahead.
The recipe calls for 3 cups of sugar which makes if fairly sweet.  I suggest cutting the sugar if you want a less sweet bread or cake.
