Chilled Peach Soup with Cinnamon, Nutmeg and Cream

The flavor of sweet juicy peaches mixed with the spices and cream take this chilled soup to another level. It's sure to be a summer favorite!

Ingredients

  • 3 cups fresh or frozen peaches
  • 2/3 cup orange juice
  • 1/4 cup sugar
  • 1/3 teaspoon ground cinnamon
  • 1/3 teaspoon ground nutmeg
  • 2 teaspoons fresh squeezed lemon juice
  • 1 1/3 cup heavy cream
  • 1 cup blueberry yogurt optional

Instructions

  • Mix spices with sugar.
  • Combine peaches, orange juice, sugar and spices in a large saucepan.
  • Stir over medium heat and bring to a boil.
  • Continue cooking about 10 more minutes.
  • Remove from heat and let cool to room temperature.
  • Add mixture to blender, then add lemon juice.
  • Blend until pureed and smooth consistency.
  • Pour into sealed container and refrigerate until chilled. About 2 hours, but you can certainly leave overnight.
  • Just before serving add heavy cream and mix until blended.
  • Pour into individual serving bowls.
  • Add a dollop of blueberry yogurt to the top of each bowl. This is optional, but takes this wonderful soup to another level.
  • Garnish with a mint sprig. (optional)

Notes

You can use a vanilla yogurt in place of blueberry, if you prefer.
This soup will keep in the refrigerator for several days.
